Fresh fruit versus purée and essence
Out of season, mango cake is made with tinned purée or flavouring essence. It is not bad, but it is a different product: sweeter, flatter, without the acidity and perfume of real fruit. If you are ordering mango cake in winter, ask which is being used so you know what to expect. In summer, ask for fresh — and expect visible fruit in the cross-section.
