Short answer
Because you are paying for hours of hand labour, not ingredients. A round buttercream cake takes about an hour to finish; a sculpted 3D cake can take a day and a half of carving, ganaching, covering and modelling, plus mandatory chilling time between stages that ties up kitchen space for days. Imported ingredients — couverture chocolate, Biscoff, Nutella — add cost that moves with the exchange rate.
The gap between a Rs 1,800 cake and a Rs 18,000 cake is genuinely confusing when both are, at bottom, flour, sugar, eggs and butter. The answer is that almost none of the difference is ingredients.
