How to Cut a Wedding Cake: Tiers, Dowels and Portions
Short answer
The couple makes the ceremonial cut on the bottom tier, then the cake goes to the kitchen. There, take the tiers apart from the top down, remove every dowel, board and decoration, and cut each tier in rings: cut a circle about two inches in from the edge, slice that ring into portions about an inch wide, then repeat with the next ring. At that size a three-tier cake of 10–14 lb serves 60–100 guests.
At most Pakistani weddings the cake is cut on stage for the photographs and then disappears, and whoever is in the kitchen is left with a tall structure full of boards and dowels and a hall of guests waiting for dessert. Cutting it well is not difficult, but it is different from cutting a birthday cake, and it helps if someone has read this before the day.
The ceremonial cut
The couple cuts the bottom tier: it is the most stable and the easiest to reach without leaning over the cake. One clean cut, or a small wedge, is all the photographs need. A decorated knife or sword is fine for the stage, but have a long, sharp kitchen knife ready for the real work. If the cake has dummy display tiers, confirm at setup which tier is real, so the knife does not meet polystyrene on camera.
Taking a tiered cake apart
- Remove toppers, fresh flowers and any sugar flowers held on wires first
- Lift the top tier off on its board with a wide spatula and set it on its own plate
- Pull out the dowels in the tier below; they are not edible, and thin ones are easy to miss inside a slice
- Repeat tier by tier down to the base
- Ask the bakery how many supports are in the cake, and count them out, so none ends up on a plate
Cutting the portions
Do not cut wedges from the centre of a large tier: the slices come out oversized and the middle collapses. Cut a circle about two inches in from the outside edge, slice that outer ring into portions about an inch wide, then cut the next ring the same way and finish with the small centre. Square tiers are simpler: cut straight rows two inches apart, then cut across them. Dip the knife in hot water and wipe it between cuts; fondant then cuts cleanly and buttercream does not drag.
How many guests it serves
| Cake | Weight | Wedding portions |
|---|---|---|
| 2 tiers | 6–8 lb | 30–50 |
| 3 tiers | 10–14 lb | 60–100 |
| 4 tiers | 16–22 lb | 120–200 |
Wedding portions are smaller than birthday slices, because dinner and other desserts come first.
What should not be served
- Dowels and the boards between tiers, which are card or plastic
- Sugar flowers, which usually contain wire and should never reach a child's plate
- Fresh flowers, which are decoration only, along with any stem wraps or picks
- Fondant is edible, but many guests peel it off; that is fine and does not spoil the portion
Brief whoever is cutting
At a hall, the caterer's staff usually cut the cake, often in a hurry. Before the day, tell them how many tiers are real, that there are dowels inside, and the portion size you want. If the guests are served from sheet cakes kept in the kitchen, the stage cake can be kept back for the family, and the top tier often goes home with the couple.
Plan the cake around the number of guests who will actually eat it.
